You have probably already read my “Herbs 101” and if not, do so now before you try to substitute. This is will give you a better feel for what you are doing.
Like me today, you might find yourself in a situation where you are out of a specific herb that a recipe is calling for. If this is your story, I have created this chart and hope that it will help assist you when choosing the correct substitutions and/or alternatives that should work well with your recipe. Just remember that whenever you substituting, you the flavor will not be as the recipe originally intended. From my own experience, I would suggest that you begin substituting with half of the specified recipe amount and then you will be able to adjust to your own personal taste. When using herbs, remember: less is more! You should always feel free to adjust and add to any recipe to suit yourself and your family. Like us ~ you just might create a new family favorite!

Poultry Seasoning | Sage plus a blend of any of these: thyme, marjoram, savory, black pepper, and rosemary |
Red Pepper | Dash bottled hot pepper sauce or black pepper |
Rosemary | Thyme; tarragon; or savory |
Sage | Poultry seasoning; savory; marjoram; or rosemary |
Savory | Thyme; marjoram; or sage |
Tarragon | Chervil; dash fennel seed; or dash aniseed |
